Our delicious Louisiana Gumbo is brimming with chicken, Andouille, Chorizo and other smoked sausages, shrimp, colorful peppers, and vegetables. Our meat stock is made on premises in classic fashion, with roasted beef and chicken bones slowly simmered for two days! The gumbo is served with a side of dirty rice and your choice of grilled garlic bread or jalapeno cornbread. We search the city for the finest ingredients without MSG! Shrimp is freshly sautéed and added at time of service, so the gumbo can be ordered without shrimp by request.
Our gumbo is distinguished in three ways. It is made with very dark roux, slowly cooked to impart rich color and flavor. Instead of traditional white rice, an authentic dirty rice dressing is served. We employ the “Cajun Method”. This means that the vegetables are added to the stock in three ways: One third are added raw, one third are sautéed and one third are blackened. This simple process creates layers of flavor.
